PACIFIC RUM (light)
Made from organic cane juice and distilled in our pot stills for maximum flavor retention, each drop of Pacific Rum (light) sees no less than 4 weeks in used bourbon barrels in order to impart even more flavor, complexity and softness. You’ll see this unique aging process in the color of the rum; a pale straw color, but more than anything you’ll taste it. In short, our barrel-aged light rum is both elegant and intense. We hope you’ll love it as much as we do.
TASTING NOTES
o Nose: Fruit notes, with pear being most prominent
o Initial Palette: Soft and oily, slightly grassy with distinct chocolate and coconut flavors.
o Finish: Warm with lingering flavors of chocolate, coconut and banana
SUGGESTED COCKTAILS
Classic Daiquiri (No messing with one of the true classics)
2 oz Pacific Rum (light)
1 oz Fresh Lime Juice
1/2 oz Simple Syrup (50/50 sugar and hot water)
Build in ice filled highball glass, stir and garnish with a slice of lime.
Columbia Gorge Breeze (Our version of the Bay Breeze)
2 oz Pacific Rum (light)
3 oz of Vincent Cranberry Palm Nectar Juice
1 oz of Pear Juice
Build in ice filled highball glass, stir and garnish with a slice of pear.
Blue Pacific (Our version of the Blue Hawaii)
1.5 oz Pacific Rum (light)
1 oz Blue Curacao
1 oz Cream of Coconut
2 oz of Pineapple Juice
Shake the liquid ingredients vigorously with ice. Strain into an ice-filled highball glass. Garnish with pineapple.
Before the Storm (Our light version of the Dark and Stormy)
2 oz Pacific Rum (light)
3 oz Ginger Beer (we like Cock n' Bull)
½ oz Fresh Lime Juice
3 Drops Bittermens Tiki Bitter
Build in ice filled highball glass, stir and garnish with lime wedge.
Bull and Sand (our riff on a Blood and Sand)
1.5 oz Pacific Rum (light)
3/4 oz Combier Rouge Cherry Liqueur
3/4 oz Punt e Mes Sweet Vermouth
3/4 oz Fresh Orange Juice
Build in ice filled highball glass, stir and garnish large slice of orange peel.
PACIFIC DARK RUM
Our first dark rum is scheduled to be released sometime between the the winter of 2012 and spring 2013. As with the whiskey, the spirit will let us know when it's ready and that's when we'll release it. Please be sure to check back with us to find out exactly when and where you can find it.
